Classic Rice Crispy Treats

6 cups Rice Krispies 10 ounces Mini marshmallows, divided

4 tablespoons Butter, salted 1/2 teaspoon Vanilla


Begin by greasing a 9 x 13in pan, set aside for later.


In a large saucepan, melt the butter over medium heat. Add most of the marshmallows, reserving one cup for later. Continue to stir until marshmallows are melted and combined with the butter. Add vanilla and stir.


Off heat, and working quickly, add the rice crispy cereal and remaining marshmallows. Fold to combine. Once cereal and marshmallow mixture is well combined, transferred to the 9 x 13inch pan. With a sheet of wax paper or parchment paper placed over top the cereal mixture, use the underside of a measuring cup to press treats flatly and evenly into the pan.


Allow treats to cool completely, then cut into squares and serve, preferably same day.


Serving suggestions: place on campfire sticks, and lightly toast before eating. Or, use the toasted treats in place of marshmallows for s’more.
